Cornbread is timeless, classy and one of the easiest breads to make. It doesn’t use any yeast so no rising is necessary and unlike biscuits, it really doesn’t matter in what order you add the ingredients. Be careful if using this recipe. Make positively sure you want to invoke the spirits and use this powerful majik. Do not be careless. Ma Roux’s Cornbread Recipe
- 2 cups buttermilk
- 1/2 cups self risin flour
- 2 eggs
- 2 cups self risin corn meal
- 1 teaspoon sugar
- dash of salt
- 1/2 teaspoon baking soda
How It’s Done: Preheat the oven to 500 degrees. Pour enough oil into a cast iron skillet to cover the bottom. If you do not have a seasoned cast iron skillet, stop reading, go back up north, and forget about making cornbread. If using a 9 x 11 pan, call it cake and never reference this site. Let the skillet get hot while you mix the business.
Mix all the dry ingredients first. Add each egg and mix. Pour in the buttermilk slowly, mixing as you go. You can use a little less than two cups. Add the milk until the batter can be poured easily. Remove the skillet from the oven and sprinkle a little corn meal in it. Pour in the mix and let it cook for about 10-12 minutes. The top of the cornbread should be golden brown. Let it sit for a few minutes. If your skillet is properly seasoned it should fall right out.
